These are serious workhorse breakfast bread bombs. They are dense, like sodabread, and best enjoyed with coffee or a bit of butter. What do you expect for nearly 20g protein packed into a tiny breakfast bar and NO added sugar (except the chocolate chips)? These aren't soft, buttery, muffins full of carbs and little else. These will provide enough fuel and protein for a hulk-smash morning in the gym or a long hike up the canyon.
1 Cup of flour (your choice oat, white or whole grain)
4 Scoops MTS Machine Whey, Peanut Butter Fluff flavor*
1 Cup almond milk (plain, unsweetened)
1 4oz snack cup unsweetened applesauce
1 Tsp baking powder
1 Tsp baking soda
1/4 Teaspoon salt
1 Cup semisweet chocolate chips
Preheat oven to 375 degrees. Blend all ingredients, except chocolate chips. Stir in the chips and pour into a greased mini loaves pan (mine has 8 mini loaf wells.) Bake for about 15-18 minutes, just until the loaves are browned a bit and done.
* You can use a flavor/brand of your choice, but I would recommend something mild, like vanilla, caramel, cinnamon bun, etc. I can't vouch for the myriad of powders and flavors out there - so keep that in mind if you experiment.
